We are to the point where many of my favorite fruits like berries and grapes are at the end of their season. While my favorite Honeycrisp apples are now in peak season – it can be a struggle to find fruit to eat and fill my Purple containers in my meal plan. Enter Pumpkin Pie Energy Bites. 🙌🏼I mean who doesn’t LOVE pumpkin Pie – these bites are sure to not disappoint if you’re a fan. I make a couple bathes and store them in the fridge to last through the week. Enjoy!
Pumpkin Pie Energy Bites
1 Cup pitted dates
1/4 raw pecan halves
1/4 Raw Walnuts
100% pure pumpkin puree
1/4 Cup unsweetened shredded coconut, reserve small amount for garnish
1 tsp. pure hazelnut extract
1 tsp. pure maple syrup
2 tsp. pumpkin pie spice
1. Place dates in a medium bowl; cover with water. Let soak for 10 minutes. Drain. Set aside.
2. Place pecans and walnuts in food processor; pulse until finely ground.
3. Add dates, pumpkin, coconut, extract, maple syrup, pumpkin pie spice, and salt; pulse until well mixed. Place in a medium bowl. Refrigerate, covered, for 30 minutes.
4. Using clean hands, roll into tablespoon-sized balls; roll in reserved coconut, if desired.
